Stuffed Bell Peppers

Stuffed Bell Peppers
  1. 4 bell peppers
  2. olive oil
  3. 1 lb ground turkey
  4. 1 stalk celery , chopped with top
  5. 1 -2 garlic clove , minced
  6. 1 small onion , chopped
  7. 1 tablespoon minced fresh parsley
  8. 1 tablespoon Worcestershire sauce
  9. 1 teaspoon spike seasoning (for zest)
  10. 28 ounces ground peeled tomatoes
  11. ½ cup shredded cheese (or more)
  12. salt and pepper

  1. Wash the peppers, cut the tops off, and place in oiled glass dish.
  2. Cover and microwave the peppers for 5 minutes.
  3. Saute the veggies and ground turkey with a dollop of olive oil.
  4. Add the tomatoes and seasonings. Cook for 3-4 minutes to evaporate some of the liquid.
  5. Stuff the peppers and top with cheese.
  6. Bake at 350 for 10 minutes or until the peppers are soft and the cheese is toasted.
  7. Add Ins: you could add cooked rice or stir in extra cheese to the mixture before baking.
