Dukan-friendly carrot muffin

  • 250 g soy flour
  • 1 egg
  • 1c low fat cottage cheese
  • 1/4 c milk
  • 1c grated carrots
  • 1 tbsp coriander
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsps cinnamon
  • 1/2 tsp salt
  • Pepper and dried chilli pepper to taste

 

  1. Pre-heat oven to gas mark 5, 350f, 180c
  2. Peel and grate carrot.
  3. Stir in egg with carrot.
  4. Stir in coriander.
  5. Stir in cottage cheese and milk.
  6. In a separate bowl, sift soy flour and remaining ingredients.
  7. Add dry ingredients to carrot mixture and thoroughly combine.
  8. Line muffin tin with cupcake liners.
  9. Spoon dough into the tins to create 12 muffins.
  10. Bake for 20 to 25 minutes.
