Creamy Mock Mashed Potato
  1. 0% Cream cheese3 TBSP
  2. 1 whole cauliflower
  3. 1 Fat Free Butter or Butter Flavoring
  4. 1 tsp. Butter Buds (optional)
  5. 1-2 Garlic clove
  6. Salt & Pepper to taste

  1. Break the cauliflower into pieces.
  2. Put the cauliflower in a steamer along with peeled, whole garlic cloves.
  3. Steam until cauliflower is very tender, (about 30-35 minutes).
  4. With a piece of cheesecloth to hold cauliflower pieces, wring and squeeze as much liquid from the vegetable as you can. The drier you can get it, the more potato-like consistency it will be.
  5. Whip the squeezed cauliflower, the garlic cloves, the cream cheese, Butter Buds (if you are using it) and salt & pepper together until smooth and creamy.
  6. Serve as you would mashed potato.
  7. A food processor or immersion blender works very well for this.
