: Bite-size sweets to help your resist your cravings… Make sure you do not eat them all at once though!

  1. Cocoa powder – 1 table spoon
  2. Egg yolk – 1 (optional)
  3. Skimmed milk – 2 flat table spoons
  4. Skimmed milk powder – 7 table spoons
  5. Sweetener – 3 table spoons
  6. Vanilla extract – 8 drops
  1. Mix all the ingredients together in a bowl, add only enough milk so that you can mix easily.
  2. When done pour into an ice-cube tray or mould, you can use a fancy shaped one or just plain cubes.
  3. Leave to settle for several hours.

Cheesecake Galette

: Cheesecake Galette

: Feels like cheating but it’s not!

  1. low fat cream cheese – 1 tbs
  2. 1 cup nonfat milk – few drops
  3. Almond Extract – few drops
  4. Artificial Sweetener – to taste
  5. Galette – 1
  6. Low fat ricotta cheese – 1 tbs
  1. Prepare your galette according to instructions. I add cinnamon and nutmeg and some stevia for a sweet flavor.
  2. Combine cream cheese, ricotta cheese and enough milk to make a creamy topping.
  3. Add almond and sweetener to taste.
  4. Spread topping on galette. Can be served warm or chilled.

Green Tea Pudding

: Green Tea Pudding
  1. Fat free milk (2 Cups)
  2. Gelatine (1 envelope)
  3. green food coloring (1 drop)
  4. green tea bag (1 tea bag)
  5. Sweetener (3 pkgs)
  6. Vanilla extract (1 tbsp)
  7. 1 tbsp (1 cup)

Instructions:

  1. Heat 1 cup of water in the microwave for 2 minutes. Steep tea bag in the hot water.
  2. Empty an envelope of gelatine into 1 cup of COLD milk. Mix them together. Heat the mixture in the microwave for 30 seconds.
  3. Keep stirring until gelatine is completely dissolved.
  4. Add another cup of milk, sweetener and vanilla extract into the mixture. Remove tea bag. Add green tea into it.
  5. (Optional) Add green food coloring. Adjust to desired color.
  6. Stir well and pour into containers. Set in the fridge for at least three hours.
  7. *For firmer set, you can reduce the amount of milk.

Carrot Cakes – Low Carb & Low Fat

Recipe: Carrot Cakes

Ingredients

  • Baking powder 1 tsp
  • Carrot 1 (not very big)
  • Cinnamon1 tsp
  • eggs 2
  • gingerbread spice1 tsp
  • Oat bran 2 tbps
  • Quark 150g
  • Sweetener 4 tbsp
  • Vanilla extract 2 drops
  • Wheat bran 1 tbsp

Instructions

  1. Grate the carrot into small bits
  2. Drain the juice away
  3. Separate the yokes from the whites
  4. Add the yokes to the carrot, add wheat and oat bran, 3tbsp of sweetener, spices and baking powder
  5. Mix the whites until stiff (with a pinch of salt) and add to the carrot paste
  6. Put the mix into muffin forms or into a small cake form (silicone works best) and put it in the oven, heated to 180C for 20-30 minutes. It\’s best to check with a wooden pick it it\’s dry inside.
  7. Mix the quark with 1tbsp of sweetener and vanilla aroma to put on top of the cakes before serving

Chocolate or Ginger Biscuits

Recipe: Chocolate or Ginger Biscuits

Ingredients

  • 2 tbsps Oat Bran
  • 1 tbsp Wheat Bran
  • 1 tbsp Sweetener
  • 1/2 tsp Ginger or 1 tsp Cocoa
  • 1 egg beaten

Instructions

  1. Mix all the dry ingredients together then add the beaten egg and mix well. Bake on a silicon mat or parchment paper. Makes 6 small biscuits or 1 large one. Bake at 180º for 15 minutes then leave to cool.

Chocolate, Vanilla or Coffee Creme

Recipe: Chocolate, Vanilla or Coffee Creme

Ingredients

  • 3 Eggs separated
  • 1/8 tsp Cornflour
  • 225 ml Skimmed Milk
  • Flavouring – Choose one of either 1 tsp Instant Coffee, 1 tsp non-fat Cocoa Powder dissolved in water or 1 Vanilla Pod split lenghtwise, insides removed and mixed with a few drops of Vanilla Extract.
  • Sweetener to taste

Instructions

  1. First make the Crème Anglaise: in a bowl mix the egg yolks with the cornflour and beat until you have a smooth mousse. Pour the milk in a saucepan and add the flavouring of your choice. Warm over a low heat. Add the warmed mixture to the egg yolks (keep stirring the egg yolk mixture as you add to avoid curdling). Put back on a low heat and keep stirring until the mixture thickens. Turn off the heat as soon as the mixture sticks to the spatula. Add sweetener to taste. Pour into a large souffle dish or individual ramekins and leave to set in refrigerator. Serve very cold. This recipe can also be used in an Ice Cream maker.

Chocolate Pancakes

Recipe: Chocolate Pancakes

Ingredients

  1. 2 Eggs
  2. 2 Tablespoons of Skimmed Milk Powder
  3. 1 Tablespoon Sweetener (or to taste)
  4. 1 Teaspoon Cocoa Powder (low fat)

Instructions

  1. Beat the eggs in a bowl then add the dry ingredients, mix well. Heat a good non-stick frying pan, use spray oil or add a few drops of oil to the pan and wipe round with kitchen roll. Add half the mixture, turn when the mixture has set on top.
